The Jolivet family entered the world of wine in 1926. The house then continued to grow and today includes 297 acres between Sancerre and Pouilly sur Loire, and 148 acres in Touraine for "Attitude". In 2001 Pascal Jolivet set out to produce a very high quality wine outside of Sancerre while remaining in the Loire, which he considers the best Sauvignon Blanc terroir in the world. His passion for this grape variety led him to the Touraine region rich in history and heritage, near the magnificent Châteaux of Châteaux of Cheverny and Chambord. The Touraine vineyard is composed mainly of five plots of limestone and clay soils with flint.
Over the years, Pascal has developed a real style for his wines, very identifiable by their purity and elegance. Pascal creates what he refers to as an "organic vinification." After a very light settling, the fermentation of the juices is carried out with indigenous yeasts in temperature-controlled stainless steel vats. Aging on fine lees for 5 months plays a fundamental role in the concentration and complexity of Pascal Jolilet’s Attitude Sauvignon Blanc. Pascal credits the very long fermentations for sustainably nourishing, and stabilizing the wines so only very low doses of sulphur are needed.
Tasting Note
Delicate floral notes gather with aromas of lime, citrus fruits, green apples, and kiwi. The refreshing and finessed palate is all thanks to the minerality and crisp acidity that seemingly goes on forever. A long, elegant finish.
