Okanagan valley, Canada | $29.99

Semillon is a versatile white grape renowned for its remarkable ability to age. Known for its high levels of aroma compounds, such as terpenes, which give it a bouquet of beeswax, lanolin, and floral notes. Originating in Bordeaux and thriving in regions like Australia’s Hunter Valley, Semillon’s flavours range from fresh apple and citrus when young to richer notes of honey, figs, and toasted nuts with age. This transformative quality, driven by balanced acidity and oxidative stability, makes it a standout choice for both dry and sweet wines that reward patient cellaring.

Semillon also undergoes distinct changes in character based on the age of the vines from which it is produced. Young vines (5-15 years) yield lighter, citrus-driven wines with modest aging potential, while mature vines (15-30 years) produce richer, more structured wines that develop complexity over time. This Semillon comes from a vineyard planted 35 years ago, located in Okanagan Falls, where it sits on a mix of glacially deposited rock, glaciofluvial sands, and gravels, with views of Vaseux Lake and McIntyre Bluff.

Tasting Note

Sixty percent of the juice was fermented in stainless steel, while the remainder was wild-fermented in new French oak barriques with full malolactic fermentation. The wine underwent bâtonnage for six months before the final blend, then returned to aging for another two months before bottling. This is a compelling wine, balancing intensity, some richness, and honeyed notes with beautifully lean yet ripe pear.

Food Pairing

Shellfish is so often the perfect match with this Semillon – think butter-poached lobster tail.
