While relatively close, Columbia Valley and British Columbia offer two distinct takes on Cabernet. BC’s cooler conditions produce a structured, elegant style with higher acidity, firmer tannins, and herbal graphite notes. Columbia Valley’s warm, dry climate creates bolder, fruit-forward wines with softer tannins and ripe blackcurrant notes, often accented by mocha and spice.

Charles Smith, the dynamic, self-taught guru of Washington wines turned from a life as a rock band manager to rock the world of wine. He sees winemaking much like music—both are about creation, individuality, and expression. Just as a song builds from notes and drumbeats, wine begins with a place and a variety, evolving into something greater. “When you realize your individuality, you’re able to create great things. I’m not gonna do what everybody else does,” he says. And so, a 1970s-inspired Cabernet with some upscale sweetness and volatility was born.

Tasting Note

The 2021 'Cs' Cab from Columbia Valley shows classic Cabernet characteristics with a refined structure. Blackberry, dark cherry, and dusty plum lead the nose, joined by subtle hints of savory herbs and brown baking spices. The palate is juicy and floral, with firm tannins providing both elegance and balance.

Food Pairing

Pair with strong cheeses like aged cheddar or gouda, or opt for a classic steakhouse burger.
